Roasted Buffalo Wing Brussels Sprouts

Roasted Buffalo Wing Brussels Sprouts offer a spicy twist on the vegetable by roasting quartered sprouts tossed in olive oil and seasoning until golden with crispy edges. They are then coated with buffalo wing sauce and crumbled blue cheese, reheated briefly to meld flavors. Garnishes of green onion, cilantro, chives, quick-pickled onions, and optional ranch dressing add freshness, herbaceous notes, and cooling contrast to the spicy buffalo sauce.

Description

Beginning with Brussels sprouts trimmed and quartered, the recipe calls for tossing them in olive oil, kosher salt, and black pepper before roasting at 425°F. Roasting for 15 to 20 minutes achieves golden crispness and caramelized edges, enhancing the natural sweetness and texture. After the initial roast, a drizzle of buffalo wing sauce and half the blue cheese are added, then the pan returns to the oven to warm the toppings without overcooking.

The finishing touches include additional wing sauce, remaining blue cheese, and fresh herbs like cilantro, chives, and sliced green onions. Quick-pickled onions add acidity and brightness, while ranch dressing can be drizzled for a creamy counterpoint to the spicy elements. This combination delivers a layered flavor profile with spicy, tangy, savory, and herbal components.

These Brussels sprouts can be served as a flavorful side dish or appetizer. The crispy roasted texture contrasts with the creamy, sharp blue cheese and tangy buffalo sauce. Timing the roasting ensures sprouts remain tender yet crisp while absorbing the bold sauce flavors. Using leftover wing sauce or blue cheese can be a good way to repurpose ingredients.

Ingredients

Servings
  • 1 pound Brussels sprouts stems removed and quartered
  • 1 tablespoon olive oil
  • salt kosher salt
  • black pepper kosher salt
  • cup buffalo wing sauce
  • ½ cup blue cheese crumbled
  • 4 green onion thinly sliced
  • ¼ cup cilantro chopped, fresh
  • 2 tablespoons chives chopped
  • onion for topping, quick pickled
  • ranch dressing for drizzling

Instructions

  1. Preheat the oven to 425 degrees F.
  2. Place the brussels on a baking sheet. Toss with the olive oil and a big pinch of salt and pepper. Roast for 15 to 20 minutes, or until golden. If your brussels are smaller, you may need to roast for less time! I like to make sure mine get a few golden crispy bits for texture.
  3. Remove the pan from the oven and drizzle with 2 to 3 tablespoons of wing sauce. Cover with half of the crumbled cheese. Place the pan back in the oven for 5 minutes, so the sauce and cheese warms up.
  4. Remove the pan and drizzle with more wing sauce. Top with the remaining cheese. Sprinkle on the chopped cilantro, chives and green onions. Top with pickled onions, drizzle with ranch if you’d like and serve!
