Instructions

  1. Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.
  2. Remove the cabbage’s damaged outer leaves. Cut it in half and then cut each half into 4-6 wedges making sure to leave the core intact.
  3. Place the cut cabbage on the prepared baking sheet. Drizzle olive oil on top and sprinkle with cumin, garlic powder, salt and pepper. Use a brush to spread the olive oil and seasoning evenly throughout.
  4. Roast until the cabbage is tender and the edges are golden brown, about 30-35 minutes, flipping halfway through.
  5. Serve warm with fresh parsley, if desired.

Notes

  • Best served immediately but leftovers keep well refrigerated up to 5 days and can be reheated in the oven.
  • You can swap the spices or use different cooking oils but expect flavor variations.
