Description

This recipe starts by slicing a large head of cabbage into thick steaks roughly three-quarters of an inch thick after removing the stem and loose outer leaves. The steaks are placed on parchment-lined baking sheets and coated on both sides with an oil mixture containing olive oil, smoked paprika, garlic powder, salt, and black pepper. The initial roasting occurs at 400°F for 20 minutes, followed by an increase to 450°F for another 5 minutes to enhance caramelization and crisp the edges to preference.

  • 1 cabbage large head
  • ¼ cup olive oil
  • 2 tablespoons butter melted
  • 1 tablespoon parsley chopped, fresh
  • 1 ½ teaspoons smoked paprika
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon salt
  • ½ teaspoon black pepper ground

Instructions

  1. Preheat oven to 400°F.
  2. Cut the stem off the bottom of a head of cabbage, then peel away a couple of the outer leaves if they are loose, browned or damaged. With the stem side flat on your cutting board, slice the cabbage into thick slices, about ¾” or so. You can slice them thinner if you prefer a bit more caramelization.
  3. Place each cabbage steak onto a baking sheet lined with parchment paper, or two depending on the size of your cabbage. I ended up with 8 steaks, so I used two baking sheets.
  4. In a small mixing bowl, add in the olive oil, salt, pepper, smoked paprika and garlic powder.
  5. Whisk to combine.
  6. Brush both sides of each cabbage steak with the seasoned oil, then bake for 20 minutes.
  7. Increase the temperature to 450°F and bake for another 5 minutes or until the edges are cooked to your liking. Once you remove the steaks from the oven, brush them with the melted butter, sprinkle with the fresh parsley and serve.
