Roasted Carrot Green Goddess Salad
Description
The Roasted Carrot Green Goddess Salad begins by roasting peeled carrots, either whole or halved depending on size, coated in olive oil and seasoned with salt, freshly cracked black pepper, and garlic powder. Roasting at 400°F for 15 to 20 minutes softens the carrots and enhances their natural sweetness while adding a slight caramelized edge.
Simultaneously, fresh butter lettuce is tossed with salt and pepper and then dressed with a green goddess dressing made from avocado, Greek yogurt, mayonnaise, fresh garlic, arugula, parsley, basil, chives, lemon juice, and a pinch of crushed red pepper flakes. The blending of these ingredients forms a creamy, herby, and tangy dressing that complements the roasted vegetables.
The warm roasted carrots are arranged on the dressed greens, allowing the dressing to lightly coat the vegetables for an appealing texture and balanced flavors. The result is a salad that combines sweet and earthy notes from the carrots with the fresh, bright, and creamy qualities of the dressing, suitable as a light main dish or a side salad.
