Description
In this recipe, carrot slices and broccoli florets are dressed with a glaze containing olive oil, honey, minced garlic, and red pepper flakes, seasoning them with kosher salt before roasting at 400°F. Ingredients
- 2 cups carrot sliced
- 2 cups broccoli washed and dried, florets
- 1 ½ tablespoons olive oil
- 1 tablespoon honey
- 1 clove garlic minced
- ¼ teaspoon red pepper flakes or to taste, optional
- kosher salt to taste
Instructions
- Preheat oven to 400°F.
- Combine oil, honey, garlic and chili flakes in a small bowl. Toss with broccoli and carrots. Sprinkle with salt.
- Spread onto a parchment lined pan and roast vegetables 18-20 minutes or until tender crisp.
Notes
- Smaller broccoli florets cook faster and will have more tender crispness compared to larger pieces.
- Frozen carrots and broccoli may be used but will not brown or develop the same texture as fresh vegetables.
- The glaze can be brushed on before roasting as well as during or after for extra flavor.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
