Roasted Carrots and Broccoli

Roasted Carrots and Broccoli are tossed with a glaze made from olive oil, honey, garlic, and optional red pepper flakes, then roasted until tender crisp with lightly caramelized edges. This combination creates a balance of sweet, savory, and mildly spicy flavors with a pleasant roasted texture.

Description

In this recipe, carrot slices and broccoli florets are dressed with a glaze containing olive oil, honey, minced garlic, and red pepper flakes, seasoning them with kosher salt before roasting at 400°F. The heat softens the vegetables while developing caramelized spots that enhance natural sweetness and add depth.

The roasting method preserves a tender crisp texture in the larger broccoli florets and carrots, while smaller broccoli pieces cook faster. The garlic and mild heat from the red pepper flakes add complexity to the glaze.

This side dish pairs well with various main courses, offering a colorful, flavorful vegetable option. It can be served warm or at room temperature depending on preference.

Leftovers keep up to three days refrigerated in an airtight container, and the use of frozen vegetables is possible though they won’t brown or crisp as well.

Ingredients

Servings
  • 2 cups carrot sliced
  • 2 cups broccoli washed and dried, florets
  • 1 ½ tablespoons olive oil
  • 1 tablespoon honey
  • 1 clove garlic minced
  • ¼ teaspoon red pepper flakes or to taste, optional
  • kosher salt to taste

Instructions

  1. Preheat oven to 400°F.
  2. Combine oil, honey, garlic and chili flakes in a small bowl. Toss with broccoli and carrots. Sprinkle with salt.
  3. Spread onto a parchment lined pan and roast vegetables 18-20 minutes or until tender crisp.

Notes

  • Smaller broccoli florets cook faster and will have more tender crispness compared to larger pieces.
  • Frozen carrots and broccoli may be used but will not brown or develop the same texture as fresh vegetables.
  • The glaze can be brushed on before roasting as well as during or after for extra flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
