Roasted Carrots Recipe
Description
Roasted Carrots Recipe uses whole or halved carrots sliced diagonally for even cooking and caramelization. Tossed in olive oil, kosher salt, and freshly ground black pepper, the carrots roast at 400 degrees Fahrenheit until they become tender and browned. The recipe finishes by tossing the warm carrots with minced fresh dill or parsley, adding a fresh, herbal component that balances the natural sweetness enhanced by roasting. This method provides a pleasant texture where the edges develop a slight crispness while the interior stays tender.
Serving this dish with a sprinkle of fresh herbs gives it an added flavor dimension, making it a good complement to a variety of main courses. Roasted carrots prepared in this manner can be part of a weeknight dinner or a special meal spread.
Ingredients
- 12 carrot
- 3 tablespoons olive oil
- 1 1/4 /4 teaspoons kosher salt
- 1/2 /2 teaspoon black pepper fresh ground
- 2 tablespoons dill minced fresh; or 2 tablespoons parsley
Instructions
- Preheat the oven to 400 degrees F.
- If the carrots are thick, cut them in half lengthwise; if not, leave whole.
- Slice the carrots diagonally in 1 1/2-inch-thick slices. The raw carrots will shrink a lot during cooking.
- Toss them in a bowl with the olive oil, salt, and pepper.
- Transfer to a sheet pan in an even layer and roast vegetables in the oven for 20 minutes, until browned and tender. You may need longer depending on the thickness of your carrots.
- Toss the carrots with minced dill or parsley, season to taste, and serve.
