Roasted Cauliflower Hummus
Description
This Roasted Cauliflower Hummus transforms tender chunks of cauliflower roasted at 400°F until caramelized into a creamy dip when blended with tahini, lemon juice, garlic, and spices like cumin and coriander. Roasting the cauliflower softens it and deepens the flavor, which contrasts with the sesame-rich tahini and fresh lemon acidity for balance. The addition of garlic and spices enhances the savory profile.
The final blend is smooth and creamy, with a mild nuttiness and subtle warmth. Adding water adjusts the texture to the desired creaminess. Sunflower seeds and chopped parsley on top provide a contrasting crunch and fresh herbal note to the dip.
This hummus is suitable for serving with vegetables, crackers, or as a spread on sandwiches. The recipe is designed for use in a high-powered blender such as a Vitamix for optimum smoothness, though a food processor may also work with more scraping.
Consistency can be easily controlled by adding small amounts of water during blending. For best results, scraping down the container walls helps ensure even blending.
Ingredients
- 1 cauliflower approx 5 cups florets, large head
- 3 tablespoons olive oil divided
- ¼ cup tahini
- 2 tablespoons water or more for desired consistency
- 1 lemon juiced
- 1 garlic clove
- ¼ teaspoon salt
- ¼ teaspoon cumin ground
- pinch ground coriander
- black pepper to taste
- olive oil sunflower seeds and chopped parsley, for garnish
Instructions
- Preheat your oven to 400 degrees fahrenheit.
- Remove the florets from the head of cauliflower and place on a baking tray. Drizzle with 1 tablespoon of olive oil (or avocado oil) and toss to combine. Place the baking tray in the oven and roast for 20 minutes.
- Transfer the cauliflower to your Vitamix or a food processor. Add the tahini, remaining 2 tablespoons of olive oil, water, lemon juice, garlic clove, salt, cumin and coriander. Add pepper to taste. Blend on high until smooth and creamy.
- Transfer to a serving bowl and garnish with sunflower seeds and chopped parsley.
Notes
- If the hummus is too thick, add water one teaspoon at a time to reach the preferred consistency.
- Use a high-powered blender like a Vitamix for the creamiest texture and scrape down sides as needed during blending.
- Garnish with sunflower seeds and chopped parsley for added texture and color.
