Description
In this recipe, whole cauliflower heads are transformed into small, rice-like pieces by pulsing in a food processor after removing the core and leaves. The cauliflower rice is spread thinly on a baking sheet, drizzled with olive oil, and sprinkled with salt before roasting at 450°F. Roasting in two stages with stirring ensures even cooking and slight browning at the edges, which enhances both texture and flavor. The result is a warm, fluffy vegetable rice with a mild roasted note.
This roasted cauliflower rice can be served as a side dish in place of regular rice or as a base for bowls and salads. It accepts extra seasonings well, such as curry powder, cumin, or chili powder, depending on the accompanying main course.

- 1 head cauliflower 1 large or 2 small
- 2 tablespoons olive oil

Instructions
- Preheat the oven to 450 degrees F. Cut the cauliflower in half and remove the core and leaves. Roughly chop the cauliflower and place in the food processor. Pulse until the cauliflower is small and fine like rice.
- Dump the cauliflower rice out onto a large rimmed baking sheet (If your baking sheet is average sized or small, use two.) Drizzle the olive oil over the top. Then mix with your hands and spread the cauliflower rice out into a thin layer. Sprinkle with salt.
- Roast in the oven for 5 minutes. Then stir and smooth out again. Roast, another 5 minutes. Serve warm.
