  • ½ red bell pepper diced
  • ½ green bell pepper diced
  • 3 tablespoons olive oil
  • 3 tablespoons taco seasoning
  • 3 cloves garlic minced
  • salt to taste
  • black pepper to taste
  • 8 small flour tortillas or corn tortillas
  • 1 lime juiced
  • 3 tablespoons cilantro chopped, fresh
  • toppings as desired

Instructions

  1. Preheat oven to 450°F. Line a baking pan with parchment paper.
  2. Combine cauliflower, bell peppers, olive oil, taco seasoning, garlic, salt, and pepper in a bowl. Toss well to combine.
  3. Roast 10 minutes, stir and roast an additional 5-7 minutes or until cauliflower is tender.
  4. While vegetables are roasting, heat tortillas according to package directions.
