Roasted Cauliflower with Lime Dressing

Roasted Cauliflower with Lime Dressing offers tender, caramelized cauliflower florets brightened by a tangy lime dressing enriched with grated garlic, mustard, mayonnaise, and fresh tarragon. The roasting process softens and browns the cauliflower, while the zing of lime and herbal notes from tarragon provide a refreshing contrast. It can be served warm or at room temperature as a flavorful side dish or light vegetarian option.

Description

Roasted Cauliflower with Lime Dressing is prepared by roasting cauliflower florets coated with lime juice, olive oil, salt, and pepper until tender and slightly browned. The dressing combines lime juice with grated garlic, mustard, mayonnaise, olive oil, and fresh tarragon, blending creamy and citrusy flavors to complement the roasted vegetable. The lime juice in both the roasting and dressing steps adds a consistent tart brightness to the dish.

The texture balances the firmness of the roasted cauliflower edges with the creamy, tangy dressing coating each piece. Fresh tarragon introduces an herbal note that lifts the overall flavor profile. Serving this dish warm or at room temperature makes it versatile for various meals or gatherings.
