Description

Roasted Cherry Tomatoes begin by arranging ripe tomatoes, either on or off the vine, on a foil-lined baking tray with whole garlic cloves and fresh thyme sprigs. The tomatoes are drizzled with olive oil and seasoned with salt and freshly ground pepper. Roasting at 400°F for 20-25 minutes softens the tomatoes until their skins blister and juices caramelize.

The garlic remains whole for quick roasting and mellow flavor. The fresh thyme adds herbal aroma without overpowering the tomatoes. After roasting, crispy tomato vines are removed, leaving soft, concentrated tomato flesh ideal for eating alone or adding to main dishes.

This preparation works well as an appetizer or as a flavorful topping for grilled proteins like chicken, tilapia, or pork chops, and even complements pizzas and bruschettas. Its versatility brings sweet, savory roasted tomato notes to meals.

  • 2 lbs. cherry tomatoes ripe
  • 2 tablespoons olive oil
  • 5 cloves garlic (use more if you love garlic)
  • 1 teaspoon salt adjust to taste, sea salt
  • ¾ teaspoon black pepper adjust to taste, freshly ground
  • 5-10 thyme can use fresh basil instead of thyme, sprigs, fresh

Instructions

  1. Cover a baking tray with aluminum foil. Rinse tomatoes well.
  2. You can remove the vines and arrange tomatoes on baking tray before roasting. Or leave tomatoes on their vine and roast them. You will remove vines later once the tomatoes are roasted.
  3. Arrange cherry tomatoes in one layer. Spread garlic cloves over tomatoes. Spray/drizzle olive oil all over. Season with salt and pepper. Spread fresh thyme all over the tomatoes.
  4. Roast cherry tomatoes in pre-heated oven at 400 degree Fahrenheit for 20-25 minutes. Remove tray from oven, let it sit for few minutes.
  5. Carefully remove the vines (note after roasting vines will be crispy and can break off into powder). To make it easy to remove tomatoes, use a fork and carefully pull off all squishy tomatoes and then remove vines and discard them.
  6. Roasted cherry tomatoes can be served as an appetizer or as a topping over main dishes such as grilled chicken, grilled tilapia, or pork chops. You can also top it over pizza, for bruschetta, over pasta, stirred with soup.

  • Use a rimmed baking tray and line it with parchment paper to preserve juices and simplify cleanup.
