Roasted Cherry Tomatoes
Description
Roasted Cherry Tomatoes starts with two pints of cherry or grape tomatoes tossed with minced garlic, olive oil, balsamic vinegar, dried basil and oregano, salt, and black pepper. Roasting at 425°F softens the tomatoes, releasing juices and melding flavors. Optional broiling adds a light char for depth. Fresh herbs like basil or parsley sprinkled on top freshen the dish. The tomatoes are ready when their skins begin to burst, signaling tenderness.
The method produces tomatoes that are juicy and slightly caramelized, offering a concentrated sweetness cut by vinegar and herbs. The garlic adds aroma without overpowering, while the olive oil facilitates roasting and flavor absorption. This makes a simple but flavorful accompaniment to meats, pasta, or grain dishes.
Serving warm enhances the fresh herb notes, but the tomatoes also work at room temperature. They can be spooned onto crostini, stirred into sauces, or added to salads. Grape tomatoes are a suitable substitution if cherry tomatoes aren’t available. The recipe relies on roasting to develop flavor rather than heavy seasoning.
For a stronger herb presence, sprinkle fresh chopped basil after roasting but before serving. The tomatoes should be watched closely during broiling to avoid burning. The brief roasting time helps retain the tomatoes’ shape while softening their texture.
Ingredients
- 2 pints cherry tomato or grape tomatoes, about 1 pound
- 2 cloves garlic minced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- ½ teaspoon basil dried

- 1 tablespoon basil leaves or chopped fresh parsley, optional for serving, fresh, thinly sliced
Instructions
- Preheat oven to 425°F.

- Roast for 15 minutes or until softened. Broil for 1-2 minutes to add a little bit of color if desired.

Notes
- Grape tomatoes can stand in for cherry tomatoes if needed.
- Fresh basil should be chopped and added after roasting for maximum flavor.
- Broil for 1–2 minutes at the end if a slight char is desired, watching carefully.
- Cook until tomato skins just begin to burst to ensure softness without disintegration.
