Roasted Cherry Tomatoes

Report
Roasted Cherry Tomatoes are a simple dish that concentrates the sweet, juicy flavors of fresh cherry tomatoes by roasting them with olive oil, garlic, thyme, salt, and pepper. The roasting softens the tomatoes, causing them to burst and caramelize slightly, enhancing their natural sweetness. These tomatoes can complement pasta, pizza, salads, or serve as a flavorful side.

Description

This recipe starts by halving fresh, ripe cherry tomatoes and tossing them with olive oil, crushed garlic cloves, fresh thyme sprigs, salt, and pepper in a baking dish. The seasoned tomatoes roast at 200°C (400°F) until they soften and start to burst open, about 30 minutes. The low, even roasting allows tomatoes to caramelize slightly without drying out.

The resulting tomatoes offer a balance of tender flesh and caramelized edges, infused with the fragrant herbs and garlic. Their concentrated natural sweetness makes them a versatile ingredient for many dishes.

Roasted cherry tomatoes can be spooned over pasta, scattered on pizzas, mixed into salads, or served alongside grilled dishes. Adding fresh basil before serving adds a touch of brightness. For deeper richness, the dish can be roasted with butter, or balsamic vinegar can be added pre-roasting to intensify sweetness.

These roasted tomatoes freeze well, making them a convenient batch-cooked component to add flavor to various meals later.
