Roasted Delicata Squash
Description
This recipe uses delicata squash sliced into rings with seeds removed, paired with shallots quartered lengthwise. The squash and shallots are coated in a mixture of olive oil, honey, chopped sage, kosher salt, and freshly ground black pepper. Roasting at 400°F for 20-25 minutes softens the squash and cooks the shallots until they are tender and starting to brown, creating a sweet and herbaceous side dish with a subtle crisp edge.
Delicata squash has an edible skin that softens when roasted, eliminating the need for peeling. This dish pairs well with roasted or grilled proteins and fits well as a warm autumn vegetable side.
Ingredients
- 2 lbs. delicata squash cut into rings
- 4 large shallot quartered lengthwise
- 1/4 cup extra virgin olive oil
- 2 Tablespoons honey liquid
- 2 Tablespoons sage finely chopped, leaves
- 2 tsp kosher salt
- 1 tsp black pepper freshly ground
Instructions
- Preheat oven to 400 degrees
- Cut each squash in half lengthwise, then scrap out the seeds and cut into 3/4" slices.
- Peel and quarter shallots lengthwise.
- Combine olive oil, honey, salt, pepper and sage in a small measuring cup.
- Toss squash and oli mixture in a bowl. Spread out squash on a baking sheet in a single layer. Roast for 20 to 25 minutes, until squash is tender, turning once half way through.
Notes
- No peeling needed as delicata squash skin is edible and softens during roasting.
