Roasted Delicata Squash

Roasted Delicata Squash features thin rings of delicata squash and quartered shallots tossed in a honey-sage olive oil mixture, then roasted until tender and caramelized. The preparation highlights the squash’s edible skin and natural sweetness, enhanced by fresh sage and honey.

Description

This recipe uses delicata squash sliced into rings with seeds removed, paired with shallots quartered lengthwise. The squash and shallots are coated in a mixture of olive oil, honey, chopped sage, kosher salt, and freshly ground black pepper. Roasting at 400°F for 20-25 minutes softens the squash and cooks the shallots until they are tender and starting to brown, creating a sweet and herbaceous side dish with a subtle crisp edge.

Delicata squash has an edible skin that softens when roasted, eliminating the need for peeling. This dish pairs well with roasted or grilled proteins and fits well as a warm autumn vegetable side.
