Roasted Delicata Squash
Description
This recipe starts by halving delicata squash and removing seeds before cutting into uniform half-inch slices. These pieces are then coated in olive oil, garlic, kosher salt, black pepper, and ground sage or poultry seasoning to add aromatic herbal notes. Roasting on parchment-lined sheets at 400°F allows the slices to develop golden edges while softening inside.
The roasting method produces tender slices with a mellow sweetness and hint of spice from the seasonings. The garlic and sage complement the natural flavor of the squash without overpowering it. This simple preparation highlights delicata's unique edible skin and creamy flesh.
These roasted squash slices work well as a side dish in autumn meals or paired with grains and proteins. They add color, texture, and a touch of sweetness to balanced plates.
Leftovers can be stored refrigerated for 3 to 4 days in airtight containers and reheated under the broiler for renewed crispness.
