  • 2 tablespoons olive oil

  • black pepper to taste
  • lemon for serving, optional, wedges

Instructions

  1. Preheat oven to 400°F.
  2. Cut the tops off of the fennel bulbs if they're present *see note.
  3. Rinse bulbs, remove any damaged or thick outer layers.
  4. Cut fennel bulb into ½" wedges. Toss with olive oil and season with salt & pepper.
  5. Place fennel on a parchment-lined pan and roast 30-35 minutes or until tender-crisp.
  6. Remove from the oven and squeeze lemon overtop if desired.
  7. Serve warm.

Notes

  • For an added flavor layer, sprinkle Parmesan cheese on the roasted fennel and broil for 1-2 minutes until golden.
  • Save fennel stalks and fronds; they can be chopped and added to salads, soups, or stir-fries.
