Ingredients
- 6 figs wash and pat dry, fresh
- 120 grams gorgonzola ½ cup or goats cheese/stilton
- 2 tablespoons olive oil
- ⅛ teaspoon thyme dried
- 2 tablespoons honey
- black pepper freshly ground
- 3 pecan chopped, honey glazed
- 6 small basil to garnish, leaves
Instructions
- Preheat the oven to 200℃/180℃fan/400℉.
- Trim the fig stem and cut an X from the top ¾ down (don't cut all the way through).
- Arrange on a baking tray, drizzle with olive oil and bake for 5 minutes.
- Remove from the oven and using a teaspoon, stuff each fig with the cheese and sprinkle a little dried thyme over the top. Drizzle with honey and bake for 10 minutes.
- Remove from oven and allow to cool for a few minutes before garnishing with freshly ground black pepper, crushed pecans and basil leaves.
Notes
- Use fresh, ripe figs for best results; unripe figs will not work well in this recipe.
- Gorgonzola Piccante offers a robust flavor, while milder options like Dolcelatte, goat cheese, or Stilton can be substituted.
- For a juicier texture, roast figs for a total of 15 minutes; increase first roasting time to 15 minutes for a more caramelized, chewy finish.
- Serve the figs warm soon after baking; they can be stored in the fridge in a sealed container for 1-2 days but do not freeze well.
