Roasted Fingerling Potatoes

Ingredients

  • 1 1/2 pounds fingerling potatoes , halved lengthwise
  • 1/4 cup vegetable oil
  • 3 cloves garlic , minced
  • 1 1/2 teaspoons kosher salt
  • 3/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 tablespoons parsley , minced

Instructions

  1. Preheat oven to 400 degrees and spray a baking sheet with vegetable oil spray.
  2. In a large bowl add the potatoes, vegetable oil, garlic, salt, black pepper and cayenne pepper.
  3. Toss well to combine.
  4. Place cut side down and roast for 20 minutes until the skin side of the potatoes starts to wrinkle.
  5. Carefully flip the potatoes, cook for an additional 10-15 minutes until fork tender and browned.
  6. Drizzle with olive oil, toss and season with additional salt if needed.
  7. Garnish with parsley.
