Roasted Fingerling Potatoes with Garlic and Herb

Roasted fingerling potatoes are seasoned with garlic, rosemary, salt, and black pepper, then roasted until golden and fork-tender. Tossed with fresh parsley before serving, the potatoes develop a crispy exterior and soft interior with herbaceous aroma, making a flavorful side dish that complements many meals.

Description

This recipe for Roasted Fingerling Potatoes with Garlic and Herb involves halving the potatoes lengthwise and coating them in olive oil, minced garlic, fresh rosemary, salt, and pepper. Roasting in a preheated oven first for 15 minutes, then stirring and roasting a further 5 to 10 minutes, results in a tender interior and a crisp, golden crust on the outside. The garlic and rosemary infuse the potatoes with aromatic, savory flavors.

After roasting, the potatoes are tossed with freshly chopped parsley that adds a bright herbal note and a splash of color. The dish pairs well as a side for roasted meats, grilled vegetables, or as part of a casual meal.

Measurement and timing should be adjusted to taste and oven characteristics. Using a foil-lined baking sheet simplifies cleanup. Nutritional content may vary based on ingredient brands.
