Description
This simple roasted garlic recipe requires trimming the top off a whole garlic bulb, drizzling it with extra virgin olive oil, and sprinkling with sea salt before wrapping tightly in foil. Roasting it in a 350°F oven for 40 to 60 minutes results in cloves that turn deeply golden and become soft and spreadable.
The mellowed flavor of roasted garlic is versatile and less sharp than raw garlic, adding richness and subtle sweetness to dishes. Roasted garlic can be incorporated into mashed potatoes or cauliflower mash to add complex flavor, or used as a spread on bread or mixed into dressings.

Ingredients
- 1 garlic whole bulb
- extra virgin olive oil for drizzling
- salt sea salt
Instructions
- Preheat the oven to 350°F.
- Trim the top ¼ inch off the top of the garlic bulb.
- Place the garlic cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with salt. Tip: I like to use a small baking dish or ramekin to help the garlic sit cut-side up.
- Wrap the garlic in the foil and roast for 40 to 60 minutes or until the cloves are deeply golden brown and tender.
- Use in any recipe (like mashed potatoes or cauliflower mashed potatoes) that calls for roasted garlic. It also freezes well.
