Sauce

  • 1 garlic see note #1, head, roasted
  • 6 Tbsp butter unsalted
  • 1 3/4 cup heavy whipping cream
  • 1 1/4 cup Parmesan Cheese freshly grated is best
  • 1/2 tsp black pepper more or less, depending on your tastes

To thicken

  • 1 Tbsp heavy whipping cream
  • 2 tsp cornstarch

Instructions

Prepare

  1. Remove cloves of roasted garlic from the head and mash with a fork until smooth and pasty. This can also be done in a food processor if you'd like.

Make sauce

  1. In a medium saucepan over MED-LOW heat, add butter and melt.
  2. Pour in heavy whipping cream and roasted garlic paste.  Stir and heat to a simmer.
  3. Stir in Parmesan cheese and whisk until smooth.

Thicken

  1. In a small bowl, combine 1 Tbsp heavy whipping cream and 2 tsp cornstarch (or flour), and whisk until smooth.
  2. Add the cornstarch and heavy cream mixture (it will be a thick paste-like consistency), whisking as you add it to remove any lumps and fully incorporate it into the sauce.
  3. Continue to whisk and simmer until sauce has thickened to a classic cream sauce consistency.  This may take a few minutes, or it could happen quicker, it all depends on your stovetop and saucepan.

Notes

  • Roasting garlic mellows its pungency and produces a paste that blends smoothly into the sauce.
  • All-purpose flour can replace cornstarch as a thickener in equal amounts if preferred.
  • This recipe makes approximately 2 to 2½ cups of sauce, enough for multiple servings.
