Roasted Garlic and Lemon Hummus

So easy to make at home, and SO much more affordable than pre-made. This recipe makes a ton, and has a delicious lemony tartness to it, which pairs extremely well with the cumin and roasted garlic flavors.

Ingredients

Servings
  • 30 oz. chickpeas drained (liquid reserved)- 2 small cans, canned
  • 1 tablespoon cumin ground
  • 1 teaspoon kosher salt
  • black pepper to taste, cracked
  • lemon approximately 1/2 cup, plus the zest of one lemon, juice of 2 large lemons
  • 1 tablespoon garlic paste or 2 large cloves raw garlic, roasted
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup tahini

Instructions

  1. Add all ingredients except for reserved liquid to food processor or blender.
  2. Blend until all ingredients are mashed and mixed.
  3. Slowly add some of the reserved liquid until the consistency becomes smooth. I added about 1/2 cup when I made this.
  4. Keep the food processor on until the desired consistency.
