Roasted Garlic Cauliflower
Description
Roasted Garlic Cauliflower offers a simple way to enjoy cauliflower by roasting the florets until tender and lightly caramelized. The minced garlic infuses the olive oil coating, enhancing the natural nuttiness of the vegetable. Roasting at 400°F softens the cauliflower while preserving some texture. The optional creamy sriracha sauce, made with mayo, sour cream, sriracha, and lime juice, provides a zesty contrast that balances the roasted flavors.
This dish can serve as a side for various meals, adding a garlicky depth to chicken, fish, or vegetarian plates. It is easy to prepare ahead and reheat, keeping the flavors intact.
The recipe suggests flipping the cauliflower halfway through baking to ensure even roasting, which helps achieve consistent tenderness without burning. Using fresh garlic and adjusting salt and pepper to taste can tailor the flavor to personal preferences.
Ingredients
- 1 cauliflower separated into florets, large head
- 3-4 cloves garlic minced
- 4 tablespoons olive oil
- salt to taste
- black pepper to taste
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil (optional), and set aside.
- Combine florets, garlic, olive oil and salt & pepper in a large bowl and stir until the Cauliflower is fully coated in oil and garlic. Transfer to a baking sheet or a glass baking dish.
- Bake uncovered for 25-30 minutes, flipping halfway, or until the cauliflower is tender.
- To Make the creamy Sriracha Sauce: Whisk 1/2 cup mayo (or ranch dressing), 1/2 cup sour-cream, 2 tablespoons sriracha, 1 teaspoon lime juice.
