Roasted Garlic Dip
Description
The dip base is created by roasting whole garlic heads until soft and sweet, then mashing the cloves and blending them with sour cream and mayonnaise for creaminess. Dried rosemary and thyme add earthy herbal notes, while fresh parsley contributes a bright, fresh contrast. Seasonings like salt, black pepper, and lemon juice enhance the overall flavor profile.
The dip works well as an accompaniment for vegetables, chips, or spreads for sandwiches and crackers. Its texture is smooth yet thick, making it versatile for different serving contexts.
Variations can be made by incorporating additional flavors such as hot sauce or roasted red peppers. Roasting garlic in advance aids in meal prep, allowing the dip to develop deeper flavors overnight.
Ingredients
- 3 heads garlic
- 3 tbsp olive oil
- 1 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 tsp rosemary dried
- 1/2 tsp thyme dried
- 3 tbsp parsley chopped
- 1/2 tsp salt
- 1/2 tsp black pepper ground
- 3 tbsp lemon juice
Instructions
- Preheat the oven to 400F. Remove the extra paper off the garlic cloves. Make sure the cloves are intact.
- Cut the top part of the garlic head so the cloves are exposed. Drizzle each garlic head with olive oil.
- Wrap the garlic heads individually with a piece of aluminum foil. Roast in the oven for one hour until the cloves are soft. Let them cool for 20-30 minutes.
- Once cool, squeeze the cloves out and put them in a bowl. Mash them using a fork. Add in sour cream and mix well.
- Add in Mayonnaise, dried rosemary, dried thyme, chopped parsley, salt, ground black pepper and lemon juice. Mix well using a spoon.
- Chill in the fridge for at least an hour before serving.
Notes
- Roast garlic a day ahead to save preparation time and enhance flavor.
- Customize the dip by adding ingredients like hot sauce, avocado, roasted red pepper, or parmesan cheese.
- Chill for at least an hour before serving to allow flavors to develop fully.
