Description

This Roasted Garlic Dipping Oil begins by trimming the top of a whole garlic head to expose the cloves. The garlic is placed in a baking dish with dried thyme and rosemary, then drizzled with olive oil. Covered with foil, it roasts in the oven at 350°F for one hour until the garlic is soft. After cooling, the roasted garlic is squeezed out of its peels and mashed into the oil and herbs, melding its sweet, mellow flavor with the olive oil and aromatic thyme and rosemary. The resulting dipping oil is rich but gentle, ideal for dipping pieces of Italian bread.

The slow roasting softens the garlic cloves and reduces their pungency, transforming them into a spreadable paste that blends fully into the oil. The use of dried herbs adds a subtle herbal note without overpowering the garlic essence.

This dipping oil can be stored in the refrigerator for up to two months and should be brought to room temperature before serving to restore its fluid texture.

  • 1 garlic head
  • ½ cup olive oil
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • Italian bread to serve

Instructions

  1. Preheat oven to 350 degrees F. Slice the top off of the head of garlic, just exposing the top of the garlic.
  2. Place the garlic, thyme and rosemary in a small, shallow baking dish and drizzle the olive oil over the garlic and into the baking dish. Cover tightly with foil and bake for 1 hour.
  3. Remove from the oven, uncover and let cool until you are able to handle the garlic. Squeeze the roasted garlic out of the peel and discard the peels. Mash the garlic with a fork and whisk it into the olive oil-herb mixture. Serve with Italian bread. (Leftover oil can be stored in the refrigerator for up to 2 months. Bring to room temperature before serving.)
