Roasted Garlic Mashed Potatoes

These mashed potatoes use a whole head of roasted garlic to add mellow sweetness and depth to creamy potatoes. Red potatoes are boiled until tender, then mashed with warm butter and half-and-half for a smooth but slightly chunky texture. Roasting the garlic softens its sharpness and allows it to blend gently throughout, enhancing the dish's savory flavor. Freshly ground black pepper and kosher salt subtly season the potatoes, balancing the richness. This preparation yields comforting, richly flavored mashed potatoes that can accompany various main courses.

Description

Roasted Garlic Mashed Potatoes start with roasting the garlic head wrapped in foil and drizzled with olive oil until cloves are soft and golden. This brings out a sweet, mild garlic flavor. Meanwhile, quartered red potatoes are boiled in salted water until fork-tender, then drained and returned to the pot. The roasted garlic cloves are squeezed from their skins into the potatoes. Warmed half-and-half and butter are mixed in to enrich the texture and flavor, producing a creamy consistency with some lumps retained. The dish is seasoned with kosher salt and fresh black pepper. The result is a mashed potato side that combines creamy richness with aromatic garlic, accented by gentle pepper heat.

This side dish pairs well with roasted meats or vegetables and can be garnished with fresh herbs or additional butter if desired. It delivers a more nuanced garlic flavor than raw garlic would while maintaining a smooth mash texture.

Ingredients

Servings
  • 1 garlic head
  • 1 tsp olive oil
  • 2 pounds potato washed and cut into quarters, red
  • kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • black pepper fresh ground

Instructions

  1. Roast the garlic - cut the top 1/4 inch off of the garlic head. Wrap the garlic head in foil and drizzle olive oil over the garlic. close the foil around the garlic and roast in oven at 375 degrees F for about an hour. The garlic will be very soft and golden when done. When ready to use, you can easily squeeze the garlic cloves out of the skin.
  2. Place potatoes in a large pot or dutch oven and cover with cold water. Add 1 tsp salt and bring to a boil. Simmer for 15 minutes or until fork tender.
  3. Drain and return potatoes to pot, along with the roasted garlic cloves.
  4. Gently warm the half and half and butter until butter is melted (this can be done on the stovetop or microwave). Add to the pot with the potatoes and garlic, along with salt and pepper. Mash until milk and butter are incorporated and potatoes are a creamy consistency with some lumps.
  5. Garnish with fresh herbs and more butter, serve.
