Roasted Garlic Recipe
Description
Roasted Garlic Recipe focuses on baking whole garlic bulbs drizzled with olive oil and wrapped in aluminum foil. Peeling is minimal to maintain the bulb's structure, while exposure at the root end allows for even roasting. Baking at 400°F for 30 to 35 minutes softens the cloves and creates a golden brown color. This slow dry-heat method mitigates sharp raw flavors and encourages a mellow, rich sweetness.
The roasted garlic cloves become soft enough to easily squeeze out of their skins, yielding a smooth, spreadable texture. This enhanced depth suits them for use on bread, mixed into sauces, or blended with other ingredients to enrich flavor without raw garlic's sharpness.
The recipe lends itself well to preparing garlic ahead of time; the roasted bulbs can be kept refrigerated and reheated gently in foil to retain softness. An alternate method mentioned involves slow-cooking cloves submerged in olive oil—garlic confit—for a similar effect. Adjustments in roasting time should be made for larger garlic varieties, such as elephant garlic, which require longer baking.
Ingredients
- 6 garlic bulbs
- 3 tablespoons olive oil
- 1 foot aluminum foil sheet
Instructions
- Preheat the oven to 400°.
- Peel the outside layers of the garlic bulbs until the cloves are exposed but connected to the bulb.
- Next, slice about a ½” inch of the opposite end of the root end to expose the raw shelled garlic cloves.
- Drizzle the olive oil onto the center of a piece of aluminum foil and place the garlic bulb cut side down right onto the oil.
- Wrap the foil up to close and bake at 400° for about 30 to 35 minutes or until the garlic is golden brown and soft. Serve.
Notes
- You can prepare roasted garlic up to 3 days in advance and keep it refrigerated for up to 7 days.
- Reheat wrapped in foil at 350°F for 8 to 10 minutes to enjoy it warm and softened.
- For a similar flavor, garlic confit can be made by cooking cloves submerged in olive oil on low heat until golden and tender.
- Increase roasting time by 20 to 25 minutes when using elephant garlic bulbs due to their larger size.
