Roasted Grape & Brie Crostini with Honey + Sea Salt
Description
The recipe involves roasting seedless red grapes drizzled with olive oil and sea salt until they begin to burst and shrink, concentrating their sweetness and softening their texture. Meanwhile, baguette slices are brushed with olive oil and topped with sliced Brie cheese, then warmed in the oven until the cheese melts. The roasted grapes are spooned over the melted Brie, then drizzled with honey for added sweetness and garnished with toasted chopped walnuts, fresh rosemary, and a sprinkle of flaky sea salt to provide contrasting textures and flavors.
This combination creates a harmonious balance of creamy, sweet, nutty, and salty elements on a crunchy bread base. These crostini make for a refined appetizer or hors d'oeuvre suitable for gatherings or casual entertaining.
The recipe yields approximately 20-24 crostini, and quantities can be adjusted for larger groups. The detailed roasting and garnishing steps allow for customization and presentation variations.
Ingredients
- 4 cups red grapes seedless
- 2 tablespoons olive oil divided
- 1 French baguette cut diagonally into 1/2 inch slices
- 8 ounces Brie cheese sliced
- 1-2 tablespoons honey for drizzling
- sea salt Maldon, for sprinkling
- 1/4 cup walnut chopped, toasted
- 1 teaspoon rosemary fresh diced
Instructions
- Preheat oven to 400 degrees F. Add grapes to a nonstick baking sheet and drizzle with 1 tablespoon olive oil and sprinkle with sea salt. Toss to coat grapes evenly and roast for about 15 minutes or until grapes begin to look like they might burst and shrivel a bit. Set grapes aside to cool. Keep oven temperature.
- Place baguette slices on separate baking sheet and brush each half with remaining 1 tablespoon olive oil. Top each with brie cheese slices and bake for 5-7 minutes until cheese is melted.
- Spoon grapes on top of cheese and drizzle honey all over. Sprinkle with some walnuts, a little bit of sea salt then garnish with a little chopped rosemary. Makes approximately 20-24 crostini.
Notes
- This recipe can be doubled or tripled to serve larger gatherings.
- Roasting the grapes concentrates their flavor and softens them, which complements the creamy Brie.
- Fresh rosemary adds a subtle herbal note that pairs well with the sweetness of honey and grapes.
