Roasted Grape Oatmeal

Roasted Grape Oatmeal combines blistered red grapes caramelized with balsamic vinegar and rosemary with creamy steel-cut oats simmered in milk. The roasting concentrates the grapes’ sweetness and adds savory, herbal depth, while the oats provide a smooth, hearty base with a mild nutty flavor.

Description

The grapes are tossed with balsamic vinegar, olive oil, sea salt, and fresh rosemary sprigs, then roasted at a high temperature until blistered and bursting, intensifying their flavor and adding complexity. Simultaneously, steel-cut oats cook slowly in milk until tender, absorbing the creamy liquid and creating a rich, comforting texture.

Served together, the savory-sweet roasted grapes atop the smooth oats add bursts of flavor and aroma, balancing sweetness with herbal and tangy notes. This oatmeal offers a mix of textures—soft oats with juicy, roasted fruit.

Leftover grapes can be refrigerated and used within 3 to 4 days, while the oatmeal is best eaten fresh, as it does not store well. Using fruit-flavored balsamic vinegars like fig or blackberry can add an additional layer of flavor if available.

Ingredients

Servings

Roasted Grapes:

  • 1 cup red grape taken off stem
  • 2 teaspoons balsamic vinegar See Recipe Notes
  • 2 teaspoons olive oil
  • ½ teaspoon salt sea salt
  • 2 rosemary sprigs, taken off stem

Oatmeal:

  • ½ cup steel cut oats (Use gluten-free oats if needed)
  • 1 ½ cups milk or milk substitute or water

Instructions

  1. Preheat oven to 425ºF.  Line baking sheet with aluminum foil.  Toss grapes in balsamic, olive oil, salt, and rosemary.  Spread onto baking sheet in single layer, and bake 25-30 minutes, until grapes begin to blister and burst.
  2. While grapes roast, bring milk to a simmer in a medium saucepan over medium-high heat.  Then, lower heat to medium and add oats.  Simmer oats for about 25 minutes, stirring often.
  3. Divide oatmeal into 2 bowls and top with grapes.
  4. Leftovers: Oats do not keep well, but any leftover grapes could be refrigerated and used within 3-4 days.

Notes

  • Fruit-flavored balsamic vinegars, such as fig or blackberry varieties, work well to enhance the roasted grapes’ taste.
  • Leftover roasted grapes should be kept refrigerated and consumed within 3 to 4 days to maintain freshness.
