Roasted Greek Potatoes Recipe With Feta Cheese And Oregano
Description
The potatoes are first boiled until just tender to reduce roasting time while ensuring a soft interior. After draining, they are spread on a baking tray and roasted in olive oil at a high temperature until golden. Slicing and gently smashing the potatoes increases surface contact for browning and adds rustic texture.
Crumbled feta cheese and sliced onions are added partway through baking, melting slightly and blending with the potatoes. Oregano and seasoning enhance the flavor with classic Greek notes. The end result is a dish with crispy and soft textures, tangy feta, and fragrant herbs.
This preparation serves well alongside grilled meats, salads, or as part of a mezze spread. The roasting method and brief parboiling balance tenderness and crispness effectively.
