Description

The potatoes are first boiled until just tender to reduce roasting time while ensuring a soft interior. After draining, they are spread on a baking tray and roasted in olive oil at a high temperature until golden. Slicing and gently smashing the potatoes increases surface contact for browning and adds rustic texture.

Crumbled feta cheese and sliced onions are added partway through baking, melting slightly and blending with the potatoes. Oregano and seasoning enhance the flavor with classic Greek notes. The end result is a dish with crispy and soft textures, tangy feta, and fragrant herbs.

  • 10-12 baby potato
  • 150 grams feta cheese
  • olive oil
  • a few lices onion
  • oregano dried
  • salt Kosher
  • black pepper Kosher

Instructions

  1. Rinse the potatoes to remove all the dirt.
  2. Crumble the feta cheese with your hands and set aside in a bowl.
  3. Heat a medium-sized cooking pot with water and add a bit of kosher salt. Boil the potatoes for about 5-7 minutes.
  4. Preheat the oven to 230°C / 446°F.
  5. Transfer the potatoes to a large baking tray and drizzle with olive oil.
  6. Bake the potatoes for about 12-15 minutes. Flip the potatoes and bake for another 10 minutes.
  7. Slice each potato lengthwise (not all the way through) and then smash it gently with a spatula.
  8. Drizzle with some more olive oil, ground pepper, and salt. Stuff some of the crumbled feta in the sliced potato, and toss the remaining on top.
  9. Toss a few slices of onion here and there and sprinkle with oregano.
  10. Bake for approximately 10 minutes more. Until the feta cheese melts, and the onion softens slightly.
  11. Ready to serve.
