Roasted Green Beans
Description
This recipe begins by trimming green beans and tossing them with olive oil, minced garlic and shallot, and lemon juice. These aromatics infuse the beans with flavor as they roast. The beans are spread evenly on a baking sheet, seasoned with kosher salt and black pepper, and roasted at 400°F for 10 to 15 minutes, shaken halfway through to ensure even cooking.
The roasting yields green beans that are tender but retain some crispness, with a lightly caramelized exterior from the olive oil. Adding Parmesan cheese after roasting introduces a nutty, salty layer to the dish, complementing the bright lemon and garlic notes.
Served warm, these roasted green beans make a flavorful side for a variety of main courses and can be prepared quickly with simple ingredients.
