Roasted Heirloom Carrots

Roasted Heirloom Carrots use a variety of colorful carrots tossed in olive oil, salt, and black pepper then roasted until crisp-tender with slight browning. Finishing touches include crumbled feta cheese, fresh lemon zest, lemon juice, and a drizzle of white truffle olive oil, which add bright, tangy, and subtle earthy flavors to the naturally sweet roasted carrots. The dish highlights the carrots' texture and sweetness with complementary savory, citrus, and truffle notes.

Description

This recipe features medium heirloom carrots trimmed and coated lightly with extra virgin olive oil, kosher salt, and freshly ground black pepper before roasting at 350°F. The roasting process takes 35 to 45 minutes, allowing the carrots to become tender enough to pierce easily with a fork while developing some slight browning that enhances their natural sweetness.

After roasting, the carrots are seasoned further with salt, then accented with crumbled feta cheese, fresh lemon zest and juice, and a drizzle of white truffle olive oil. The feta adds a creamy, tangy element; lemon zest and juice bring a bright acidity; and the truffle oil introduces an earthy aroma that elevates the overall flavor profile.

The resulting dish balances sweet, savory, and tangy elements with a crisp-tender texture, making it an elegant side that can accompany a variety of main courses or be enjoyed on its own as a flavorful vegetable dish.
