Roasted Heirloom Tomatoes, Asparagus, and Green Beans

Ingredients

Servings
  • 7 asparagus woody ends removed, cut into thirds, stalks
  • green beans ends removed and cut in half, a handful of
  • 2 heirloom tomato baby, handfuls
  • ¼ yellow onion sliced
  • 1 tbsp olive oil
  • salt to taste, sea salt and freshly cracked
  • black pepper to taste, sea salt and freshly cracked
  • 1 clove garlic minced
  • balsamic vinegar if desired, for serving

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with foil, then coat with cooking spray.
  2. Place the veggies on the prepared baking sheet. Drizzle with the olive oil, then season with sea salt and freshly cracked pepper, to taste; toss to coat evenly.
  3. Place into the oven and roast for 13 minutes.
  4. Remove from the oven and toss with minced garlic.
  5. Place in the oven and roast for 2 minutes or until done.
  6. Remove from the oven and serve immediately. Enjoy.
