Roasted Honey Garlic Glazed Carrots

Roasted Honey Garlic Glazed Carrots offers tender carrots with a caramelized exterior, coated in a buttery garlic and honey glaze. Baking at a high temperature then briefly broiling helps develop a lightly crisp edge while maintaining a soft interior. Parsley adds a fresh herb note. This recipe can be adapted for whole baby carrots or chopped carrots, with cooking time adjusted for tenderness.

Description

The recipe involves tossing carrots with olive oil, salt, and pepper before roasting them at 425°F to soften and develop roasted flavor. A brief broil at the end creates a slight caramelized crust. Meanwhile, a glaze of melted butter, minced garlic, honey, and parsley is prepared by gently heating to meld flavors and slightly thicken the sauce.

Once roasted, the glaze is poured over the warm carrots and they are tossed to coat evenly, giving a glossy finish and sweet-savory profile with a herbal lift from the parsley. The combination of honey and garlic creates a balance of sweetness and aromatic pungency.

This side integrates well with roasted meats or other savory entrees. Notes suggest using petite baby carrots will reduce the roasting time to about 15 minutes, helping to avoid overcooking and maintaining a tender but firm texture.

Ingredients

Servings
  • 1 pound carrot chopped, or baby carrots, see note, whole
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 6 tablespoons butter
  • cup honey
  • 2 teaspoons garlic minced
  • 1 teaspoon parsley may sub 1/4 teaspoon dried, fresh chopped

Instructions

  1. Preheat oven to 425 degrees and grease a rimmed baking sheet or casserole dish. It should be large enough that your carrots can fit in a single layer.
  2. Toss carrots with oil, then season with salt and pepper. Arrange in a single layer on prepared baking pan.
  3. Bake in preheated oven for 25 minutes, then switch to BROIL for 1-2 minutes (watch closely so they don't burn!). While carrots are baking prepare the glaze.
  4. Melt butter in a small sauce pan over medium heat. Stir in garlic for 1 minute.
  5. Stir in honey, bring to a boil, then remove from heat and stir in parsley.
  6. When carrots are finished baking, pour glaze over the carrots and toss to coat. Allow to cool slightly before serving.

Notes

  • Petite baby carrots cook faster; check for fork-tenderness at 15 minutes to avoid overcooking.
  • Monitoring during broiling is important to prevent burning of the carrots.
  • The glaze should be added after roasting to preserve the honey’s flavor and the garlic’s aroma.
