Description

The Roasted Jalapeño Salsa Recipe starts with whole jalapeños, white onion, and garlic roasted in a dry pan until the skins are blackened and the flesh softened. These ingredients are blended with fresh cilantro, lime juice, salt, and some water to smooth out the texture. Heating the blended salsa in hot oil in the same pan where the vegetables were roasted deepens the flavors and slightly cooks the mixture further for a richer taste.

The salsa has a smoky, slightly sweet, and tangy flavor from the combination of fire-charred peppers and lime juice. The texture is smooth and pourable, good as a condiment for tacos, grilled meats, or as a dip. Roasting the vegetables imparts an earthy heat without excessive sharpness.

  • 9 jalapeno pepper large
  • ½ white onion large
  • 3 cloves garlic
  • 12 cilantro sprigs
  • lime juice juice of 2 limes
  • 1 tsp. salt to taste
  • 2 tbsp. neutral cooking oil generic cooking oil

Instructions

Roasting and Blending

  1. Heat a dry pan to medium-hot and add the jalapeños, onion, and garlic.
  2. Cook until the peppers are completely blackened, about 20 minutes. Remove from the pan.
  3. Cut the stems off of the jalapeños and place them in your blender.
  4. Remove the garlic cloves from their husks and add to your blender.
  5. Add the onion and cilantro, ¼ cup of water, lime juice, and 1 tsp. salt.
  6. Blend for 30 seconds. 

"Seasoning the Salsa"

  1. Heat 2 tablespoon of cooking oil to medium-hot in the same pan that you roasted the jalapeños.
  2. Pour the blended salsa into the hot oil. This step is called "seasoning" the salsa.

Cooking the Salsa

  1. After 1 minute in the hot oil, reduce the heat to low and simmer for 15 minutes. This deepens and intensifies the flavor.
  2. After 15 minutes, take and adjust the salt if needed.

Notes

  • Oven roasting jalapeños on a foil-lined baking sheet for about 30 minutes with a turn gives even charring if not using a stovetop pan.
  • The step of seasoning the salsa by frying it briefly in hot oil enriches its flavor and texture.
  • Adjust salt at the end of cooking to suit taste preferences.
