Description
This Roasted Kohlrabi recipe uses peeled and quartered kohlrabi bulbs sliced about half an inch thick. The slices are tossed with olive oil, garlic powder, salt, and black pepper before roasting at 425°F until tender but slightly crisp, about 22 to 24 minutes.
The result is a roasted vegetable with a lightly browned exterior and tender interior, accented by gentle garlic and seasoning. The roasting temperature ensures caramelization without mushiness, maintaining some firm texture in the slices.
Roasted kohlrabi can be served warm as a side dish and pairs well with meats or other roasted vegetables. The tops of the kohlrabi are edible and can be saved for salads or stir fries, adding an additional use for the whole vegetable.

Ingredients
- 4 kohlrabi bulbs
- 1 tablespoon olive oil

Instructions
- Preheat oven to 425°F.
- Cut the tops off of the kohlrabi (they are edible, set aside for use in salads or stir fries).
- Cut the bulb in quarters. Once cut, peel the outer layer of skin.
- Chop the kohlrabi into 1/2" slices.
- Toss with olive oil, garlic powder, salt and pepper to taste. Roast 22-24 minutes or until tender crisp.
- Serve warm.
Notes
- Save kohlrabi tops for salads or stir-fried dishes; they are edible and add variety.
