Roasted Mango Chicken Recipe
Description
This recipe begins by marinating chicken thighs in aromatic ingredients including fresh minced garlic, grated ginger, turmeric, and salt combined with oil, which enhances flavor and tenderizes the meat. Simultaneously, a mango sauce is puréed using cubed mango, Sriracha hot sauce for heat, and fresh lemon juice to balance sweetness with acidity.
After marinating half an hour, the chicken is browned over medium-high heat to render the skin crispy and deepen flavor. It is then baked at 350°F, basted periodically with mango sauce to build layers of sweet-spicy glaze that caramelizes while cooking through. The result is a crispy-topped, juicy chicken with a lively, tropical sauce.
Garnishing with chopped cilantro adds herbal freshness. The dish pairs well with a choice of side dishes, offering flexibility for a main course with balanced flavors.
Ingredients
- 2 lbs chicken thighs , skin on, bone in
- 3 garlic minced, cloves
- 1 tbsp ginger fresh
- 1 tsp Turmeric
- 1 tsp salt
- 2 tbsp vegetable oil (divided)
- 2 cups Mango , cubed
- 2 tbsp Sriracha sauce
- 2 tbsp lemon juice
- cilantro for garnish
Instructions
- In a small bowl combine garlic, ginger, turmeric, salt and 1 tablespoon of vegetable oil. Mix together and rub all over chicken thighs. Set aside to marinate for 30 minutes and make the mango sauce.
- In a blender add the mango, Sriracha sauce and lemon juice. Purée to smooth and set aside.
- Preheat over to 350°F. In an oven proof skillet (I use my cast iron) add the remaining tablespoon of vegetable oil and over medium high heat brown the chicken on both sides. Season with salt and brush with a quarter of the mango sauce.
- Bake for 35 to 40 minutes until golden brown and chicken is cooked through. If it gets too brown before it’s done, cover with aluminum foil and return to the oven. Baste with mango sauce once before removing from oven to caramelize on top. Serve with remaining mango sauce, chopped cilantro on top and side dish of choice.
