The addition of crunchy pistachios and juicy pomegranate arils after roasting introduces contrasting textures and a fresh burst of flavor. It's a seasonal vegetable side that combines sweet, savory, and nutty notes for a vibrant dish.

Description

Roasted Maple Mustard Brussels Sprouts are prepared by halving or quartering Brussels sprouts and coating them with a simple mixture of pure maple syrup and Dijon mustard. Roasting them at 425°F results in a caramelized exterior and tender interior, offering a pleasing texture. The recipe finishes with a sprinkle of chopped pistachios and pomegranate arils, adding texture and a pop of brightness. This combination brings together the sweetness of maple, the tang of mustard, and the nuttiness and fruitiness from the toppings.

The roasting process requires occasional tossing to ensure even cooking and caramelization. The flavors are layered without complicated steps, making it suitable for serving alongside roasted meats or as part of a vegetarian plate. The crunchy elements introduced by pistachios and pomegranate arils also enhance the eating experience, contrasting with the soft sprouts.
