Roasted Mini Potatoes
Description
This recipe uses tiny potatoes, some halved if larger, tossed with olive oil, chopped garlic, kosher salt, and black pepper. The high oven temperature (450°F) encourages browning and crispness. After about 20 minutes of roasting, Parmesan cheese is sprinkled on top and the potatoes are served immediately, ensuring the cheese slightly melts into the hot potatoes.
The resulting potatoes balance crisp and tender textures, with the garlic and Parmesan adding depth and subtle savory flavors. These potatoes pair well with a range of proteins or vegetable dishes, making them a versatile accompaniment for a meal.
Choosing small, uniform potatoes supports even cooking. Using jarred garlic is an option but fresh garlic may provide a stronger aroma. Serving right after roasting preserves the texture and flavor optimal for enjoyment.
Ingredients
- 1 lb potato tiny, mine are from Trader Joes
- 4 tablespoon olive oil
- 3 garlic cloves, chopped
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ¼ cup Parmesan Cheese
Instructions
- preheat oven to 450°
- wash 1 lb. teeny tiny potatoes and pat dry
- slice bigger ones in half (optional)
- put in a bowl and toss with 3-4 tablespoon olive oil, 3 garlic cloves (I buy the jarred ones), 1 teaspoon kosher salt, ½ teaspoon pepper
- place on a baking sheet and cook for about 20 minutes
- sprinkle with parmesan cheese and serve immediately
Notes
- Look for small mini potatoes at your grocery or specialty store, such as Trader Joe's, for best results.
- Slicing larger mini potatoes in half helps achieve even roasting and tenderness.
- Use fresh garlic for a more pronounced flavor, but jarred garlic works for convenience.
