Roasted Mushrooms in Garlic Butter
Description
Roasted Mushrooms in Garlic Butter combines whole mushrooms with a garlic and herb-infused butter sauce. By roasting at a high temperature, the mushrooms soften and absorb the flavorful butter and seasonings while developing a tender texture. The mixture of garlic, Italian seasoning, olive oil, salt, and pepper ensures a balanced savory profile. The fresh parsley added at the end lends a touch of color and mild freshness.
The method includes tossing the mushrooms in the butter mixture, roasting them on a sheet pan coated with cooking spray, and stirring once midway to ensure even cooking. The mushrooms' texture becomes tender but still hearty, making them suitable as a side dish or topping for proteins or grains.
For smaller mushroom pieces, you can slice or halve before roasting, adjusting the cooking time accordingly. Using a blend of dried Italian herbs provides a convenient way to season, but fresh or other dried herbs can be substituted as preferred.
Ingredients
- 2 pounds mushroom cleaned and stems trimmed, whole
- 4 tablespoons butter melted
- 2 teaspoons garlic minced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- salt to taste
- black pepper to taste
- cooking spray
- 2 tablespoons fresh herbs I used parsley, chopped
Instructions
- Preheat the oven to 425 degrees F. Coat a sheet pan with cooking spray.
- Arrange the mushrooms in a single layer on the sheet pan.
- In a small bowl, whisk together the butter, garlic, Italian seasoning, olive oil, salt and pepper.
- Drizzle the butter mixture over the mushrooms. Toss to coat evenly.
- Place the pan in the oven and cook for 15-20 minutes or until mushrooms are tender, stirring once halfway through the cook time.
- Sprinkle with fresh herbs, then serve immediately.
Notes
- Slicing or halving mushrooms reduces cook time and offers smaller-sized servings.
- Italian seasoning here is a mix of garlic powder, dried basil, rosemary, oregano, and parsley; you can replace it with your preferred dried herbs.
- Apply cooking spray to the pan to prevent sticking and ensure even roasting.
