  • 2 large sweet onion 1 ½ -2 pounds
  • 2 tablespoons butter melted
  • 1 teaspoon balsamic vinegar
  • 3 tablespoons water or broth
  • teaspoon kosher salt or to taste
  • teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Whisk melted butter and balsamic vinegar.
  3. Peel the onions and cut into ½" slices, do not separate the rings.
  4. Place the onions in a greased 9x13 baking dish and brush with the butter mixture. It's ok if they overlap a little bit.
  5. Pour the water into the casserole dish.
  6. Season with salt and pepper and roast 40-50 minutes or until golden and tender.

Notes

  • Use a ceramic or glass baking dish for more even roasting and to develop crispy edges.
  • Check onions periodically to roast them to your desired tenderness and caramelization.
