Description
Roasted Peewee Carrots with Orange Miso Glaze and Tofu Puree starts with peeling and roasting carrots and shallots together after seasoning with canola oil, berbere spice, and salt. After initial roasting at 350°F for 20 minutes, the carrots are removed and tossed with an orange miso glaze. The glaze is made by reducing orange juice then whisking in miso paste to a rich consistency.
The glazed carrots receive an additional roasting step at a higher temperature, 400°F, for 5 minutes to caramelize the glaze and add a sticky, flavorful coating. The tofu puree combines tofu, cottage cheese, garlic, and salt blended until smooth, providing a creamy and mild contrast to the spiced carrots.
The final plating includes dollops of the tofu puree dotting the glazed carrots, creating a balance of textures and flavors with sweet citrus notes, umami miso, and warming berbere spice.
Ingredients
Orange miso glaze:
- 1 quart orange juice
- 1/2 cup miso paste
Tofu puree:
- 1 tofu block
- 1/2 cup cottage cheese
- 1 clove garlic
- salt
Carrots:
- 2 pounds carrot
- 5 shallot
- canola oil
- 1 tablespoon berbere spice
- salt to taste
- 1/2 cup miso orange glaze
- tofu puree
Instructions
Orange Miso Glaze
- Reduce orange juice by half, whisk in miso.
Tofu Puree
- Puree all ingredients in a vitaprep.
Roasted Carrots
- Toss carrots with shallots, berbere spice, salt and canola oil.
- Roast in 350 degrees F (176 degrees C) oven for 20 minutes turning half way through the roasting process.
Serving
- Just before serving, toss carrots in orange miso glaze, roast for 5 minutes in 400 degrees F (204 degrees C) oven to glaze the carrots.
- Dot with tofu puree before serving.
