Roasted Potatoes and Kielbasa (One-Pan Recipe)

Roasted Potatoes and Kielbasa combines sliced red potatoes and sausage rings tossed with parsley, garlic, salt, and olive oil, then baked until golden and crisp. This one-pan recipe delivers a hearty combination of tender, roasted potatoes with savory, slightly caramelized kielbasa. Stirring halfway through ensures even browning, making it an easy, flavorful meal or side dish with minimal cleanup.

Description

Roasted Potatoes and Kielbasa (One-Pan Recipe) features red potatoes cut into thin rings and Polish kielbasa sliced into thick rounds. These ingredients are tossed with olive oil, fresh or dried parsley, pressed garlic cloves, and sea salt before spreading evenly on a baking sheet. Baking at 400ºF for 40 to 45 minutes, with a stir midway, yields potatoes with crisp edges and tender centers alongside browned, juicy sausage slices.

The dish showcases a balance between the soft, starchy potatoes and the smoky, flavorful kielbasa, enhanced simply by garlic and parsley. This close roasting method encourages shared browning and melding of flavors on a single pan.

This meal suits casual family dinners or straightforward weeknight cooking, requiring just basic prep and one pan to reduce cleanup. It can be garnished with fresh parsley as a finishing touch.

A note within the recipe suggests adding sausage halfway through cooking when using leaner varieties to prevent burning, ensuring well-cooked and flavorful results.

Ingredients

Servings
  • 3 lbs red potato cut into 1/4" thick rings, small
  • 2 Tbsp extra light olive oil or any high heat cooking oil
  • 2 Tbsp parsley or 1/2 Tbsp dried parsley, fresh, minced
  • 1 tsp salt sea salt
  • 2 garlic pressed, cloves
  • 1 lb kielbasa or sausage cut into 3/4" thick rings (we used Polish kielbasa)

Instructions

Prep:

  1. Preheat Oven to 400˚F. Line a large baking sheet with parchment paper, or Silpat.

How to Make Roasted Potatoes and Kielbasa:

  1. Cut potatoes into rings about 1/4" thick. If potatoes are tiny baby red potatoes, you can half or quarter them so they are about 1/4" thick. Slice Kielbasa into 3/4" thick rings. Place potatoes and kielbasa in a large mixing bowl.
  2. Add parsley, 2 pressed garlic cloves, 1 tsp salt, 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400˚F for 40-45 min or until potatoes are browned an crisp.* Stir halfway through baking to ensure even browning. Garnish with fresh parsley if desired.

Notes

  • Add the sausage midway through roasting if using lean kielbasa or sausage to prevent burning.
