Roasted Red Pepper Alfredo
Description
The Roasted Red Pepper Alfredo uses linguine as the base, cooked until tender. The sauce starts by softening garlic and onions in olive oil to build a mild aromatic foundation. Then, milk and heavy cream are added along with crumbled goat cheese and Parmesan, which melt into a velvety, creamy sauce. A jarred roasted red pepper is incorporated and pureed with an immersion blender, creating a smooth, vibrant sauce that coats the pasta evenly.
The flavor balances creamy richness with the subtle sweetness and earthiness of roasted peppers, enhanced by the tang of goat cheese and the depth of Parmesan. This combination results in a sauce that is both silky in texture and flavorful without overwhelming the pasta.
After tossing the pasta with the sauce, an optional additional sprinkle of Parmesan on top adds a sharp, salty finish. The dish is intended to be served immediately to enjoy the sauce's creamy consistency and fresh texture. It pairs well as a standalone meal but can also be complemented by a simple salad or steamed vegetables.
