Description

The Roasted Red Pepper Hummus combines rinsed canned garbanzo beans with tahini paste, minced garlic, kosher salt, and cayenne pepper, all blended in a food processor until very smooth. Extra virgin olive oil, lemon juice, and cold water are added to achieve a creamy consistency. Once smooth, roughly chopped roasted red bell peppers are pureed into the mixture to impart a smoky sweetness and vibrant color. The result is a smooth dip with a balance of creamy, tangy, and mildly spicy flavors.

  • 1 ounce garbanzo beans rinsed and drained, canned
  • 2 cloves garlic , chopped
  • 2 tablespoons tahini
  • ¼ teaspoon kosher salt
  • teaspoon cayenne pepper
  • ½ lemon , juiced
  • ¼ cup extra virgin olive oil
  • 2-3 tablespoons water cold
  • 1 cup roasted red bell peppers , jarred or roasted from fresh, roughly chopped

Instructions

  1. Combine the garbanzo beans, tahini, garlic, kosher salt, and cayenne pepper in the bowl of a food processor and process for 3-4 minutes or until super smooth. Add the extra virgin olive oil, lemon juice, and 2 tablespoons water and process for another minute. Add the red bell peppers and process for 1 more minute minutes or until smooth. Scrape the bottom of the processor and the sides to combine all of the ingredients. Add another tablespoon of water if the hummus is too thick. Taste for seasoning and add more salt, lemon juice, or cayenne pepper. Serve with chopped veggies or sliced pita bread.
