Roasted Red Pepper Hummus

Made with sweet roasted red bell peppers, chickpeas, tahini, lemon juice, garlic, and spices. It's perfect for snacking or serve it as an appetizer!

Ingredients

Servings
  • 2 tablespoons aquafaba from the can of chickpeas
  • 15 ounces chickpeas rinsed and drained
  • 4 ounces roasted red pepper no liquid and roughly chopped, jarred
  • 3 tablespoons lemon juice fresh
  • 2 tablespoons tahini
  • 1 clove garlic or 1/2 teaspoon garlic powder, grated
  • 1/2 teaspoon cumin ground
  • 1/2 teaspoon smoked paprika
  • salt to taste
  • 2 tablespoons olive oil
  • 2 tablespoons water additional olive oil can be used if preferred

Instructions

  1. Place the aquafaba, chickpeas, red peppers, lemon juice, garlic, spices, and salt in a high speed blender or food processor and blend until the ingredients are broken down. It will not be smooth at this point.
  2. Add in the olive oil and water and purée until smooth. Taste for seasoning and add additional salt, lemon juice or olive oil as needed.
  3. Top the hummus with chopped roasted red peppers, olive oil, and za'atar if desired. Serve with warm pita bread and vegetables.
