Description
To make Roasted Red Potatoes, red potatoes are cleaned and cut in half, then tossed in olive oil, minced garlic, Italian seasoning, salt, and black pepper to evenly coat each piece. They are spread in a single layer on a foil-lined baking sheet and roasted at 400 degrees Fahrenheit until fork tender and golden, which typically takes 35-40 minutes.
Before serving, the potatoes are sprinkled with grated Parmesan cheese and fresh chopped parsley, adding a savory, slightly nutty flavor and a fresh herbaceous finish. The roasting creates a crisp outer layer with a tender center, ideal as a side dish for many main courses.

Ingredients
- 1 1/2 lbs potato cleaned and cut in half, red
- 2 Tbsp olive oil
- 2 tsp garlic minced

Instructions
