Roasted Red Potatoes
Description
The potatoes are halved baby red potatoes tossed with olive oil, minced garlic, salt, black pepper, Italian seasoning, and finely grated Parmesan cheese. The Parmesan melts and browns during roasting, adding a savory crust and texture contrast. The seasoned potatoes are spread in a single layer on a foil-lined baking sheet to ensure even roasting.
Baking at 400 degrees Fahrenheit for 35 to 40 minutes results in tender potatoes with lightly crisped, flavorful edges. After baking, fresh chopped parsley is sprinkled over to introduce a fresh herbal note. This recipe highlights the natural sweetness of red potatoes balanced by garlic and cheese.
If baby potatoes are unavailable, large red potatoes can be cut into 1-inch pieces and roasted similarly, maintaining the same seasoning and method. These roasted potatoes pair well with a wide range of mains or can be served as a hearty snack.
Ingredients
- 1 1/2 pounds red potatoes halved, baby
- 1/4 cup olive oil
- 2 teaspoons garlic minced
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/4 cup Parmesan Cheese finely grated
- 2 tablespoons parsley chopped, fresh
- cooking spray
Instructions
- Preheat the oven to 400 degrees. Line a sheet pan with foil and coat the foil with cooking spray.
- Place the potatoes in a large bowl. Add the olive oil, garlic, salt, pepper, Italian seasoning and parmesan cheese. Toss to coat.
- Spread the potatoes in a single layer on the prepared baking sheet. Bake for 35-40 minutes or until golden brown and fork tender. Sprinkle with parsley and serve.
Notes
