- 2 pounds baby red potatoes cut in half
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp sea salt
- ½ tsp black pepper
- fresh herbs optional

Instructions
- First, preheat your oven to 425 degrees Fahrenheit. Slice potatoes in half or quarters.
- In a large bowl, add halved potatoes, oil, garlic powder, sea salt, and pepper. Toss to combine.
- Arrange the potatoes in an even layer on a rimmed baking pan.
- Bake for 40 minutes, flipping halfway through.
- Finally, remove from oven when the potatoes are fork tender. Garnish with fresh herbs if desired.
