Roasted Smashed Duck Fat Potatoes

Roasted Smashed Duck Fat Potatoes feature tender boiled baby potatoes crushed to flatten slightly, then roasted with rich duck fat until crispy and golden. The exterior develops a satisfying crunch while the interior stays soft. A sprinkling of fresh parsley adds brightness to the savory potatoes.

Description

This recipe uses small potatoes like Honey Gold or baby Dutch potatoes, boiled until tender but intact. They are gently smashed on a rimmed sheet pan to about half an inch thickness to increase surface area for roasting. Coated and tossed with duck fat, the potatoes are seasoned simply with kosher salt and black pepper.

Roasting at 400°F in two stages—first on one side, then flipped—creates crisp, browned edges and a slightly caramelized crust while preserving soft centers. Fresh chopped parsley sprinkled after baking provides a fresh herbal contrast to the rich duck fat.

The result offers a flavorful alternative to traditional roasted potatoes, with a distinctive crispy-soft texture and enhanced savoriness from the duck fat. These potatoes serve well as a side dish complementing meats or roasted vegetables.

Ingredients

Servings
  • 1 pound Honey Gold Potatoes or other teeny tiny potato, or baby dutch potatoes
  • 2 tablespoons duck fat
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • prinkle parsley chopped

Instructions

  1. Preheat the oven to 400°.
  2. Place the potatoes in a pot and cover with water.  Bring to a boil, reduce heat and simmer for 10-12 minutes or until potatoes are tender, but not falling apart.  Drain potatoes and place on a rimmed sheet pan.
  3. Use the flat bottom portion of a one cup measure, glass or other 3-4" wide flat surface to gently smash the potatoes to about ½" thick. Add the duck fat to the potatoes and gently toss the potatoes to coat them with the duck fat.  Sprinkle with salt and pepper and roast for 15 minutes.
  4. Using a spatula, flip the potatoes and return them to the hot oven for an additional 15-20 minutes.  Remove from oven and sprinkle with parsley. Serve.
